A formal introduction: Verónica Licha-López is currently a graduate student at the University of Southern California, where she hopes to receive an M.A. in Strategic Public Relations in May 2015. Born and raised in San Juan, Puerto Rico, she is fluent in both, English and Spanish, and holds a B.A. in communications from Universidad del Sagrado Corazón in 2012.
My introduction: My full name is Verónica Licha-López, but I prefer to be called “Vero”. Currently living in Los Angeles, by way of Puerto Rico, I find myself in the middle of achieving a goal and at the same time exploring others. I am a mofongo enthusiast, which in a way completely describes me. This dish has the plantain as its main star. When mixed with other ingredients it transforms into a whole meal that went from being a vegetable into a blend of unmatchable flavors and colors. If i could choose to be anything for the rest of my life, it would be just that, no, not a combination of mashed plantains, but a jumble of experiences and seasonings acquired by being open and tolerant to whatever comes. Also, don’t forget to put an accent on the “ó” in my name!
